Vegetable Frittata
Ingredients:
3 spring onions or 1/2 chopped onion 3 cups of vegetables ( capsicum, sweetcorn, broccoli, carrots, peas, beans, asparagus, spinach leaves)
2 tbsp chopped parsley
2 tsp olive oil
7 large eggs beaten
1/2 cup low fat milk
1/3 cup grated reduced fat cheese
Method: Preheat oven to 180 degrees C. Lightly fry the onion & other vegetables in a non stick, oven proof frypan. Add parsley. Whisk the eggs & milk together in a large jug. Pour egg mixture over the top of the vegetables Sprinkle cheese over the top.
Bake in warm oven 15 – 20 mins, until just firm. Avoid over cooking which will cause the frittata to go rubbery. Allow to cool slightly before removing from the pan. Cut into wedges to serve.
Tip: The left overs are great for packed lunches the next day.
