Winter is the time to enjoy warming soups.
Fend off Winter colds and flu with this recipe containing the super power of broccoli, packed with folate, fibre, vitamins C and A, and calcium.
As a member of the cruciferous vegetable family broccoli also contains compounds that impedes cancer and antioxidants to slow ageing.
Broccoli Soup Ingredients:
- 1 tbsp olive oil
- 1 chopped brown onion
- 3 cloves garlic
- 1 fennel bulb
- 1 sliced leek
- 2 heads of chopped broccoli (include heads & stem)
- 1 Litre of salt reduced chicken stock
In a large saucepan, fry onion, leek, garlic and fennel in olive oil until softened.Add broccoli and stock. Bring to the boil. Simmer 5-10 minutes until the broccoli is tender. Blend with a stick blender. Serve and enjoy with a dollop of Greek yoghurt & cracked black pepper.
